There are a ridiculous amount of oils that you can cook with, but some are better for certain cooking situations than others. When oil begins to smoke, its chemical properties are being broken down to produce toxic fumes + also a bad taste. Due to the varying levels of smoke point in oils, high heat cooking should only be performed with certain types of oil:
— Frying + sauteing at high heat: almond oil, light olive oil, or avocado oil
— Baking + stir-frying: canola oil, peanut oil, or extra virgin olive oil
— Sauces + low-heat baking: hemp oil, walnut oil, or coconut oil
— No heat [dips//spreads]: flaxseed oil + wheat germ oil.
