A Week of Meals From Trader Joe’s: Fall Edition

It’s finally that time of year where our favorite fall products start appearing in the grocery stores! From pumpkin spice everything, to fresh picked apples + all the fall veggies, we are almost too excited to start cooking. Here is a week of fall inspired meals that can be made from one trip to Trader Joe’s!

 

Here’s what you’ll need: 

Frozen //

— Petite Peas

— Riced Cauliflower + Butternut Squash Risotto

— Butternut Squash Pizza Crust

 

Refrigerated + Produce //

— Shredded Brussel Sprouts

— Honey Roasted Pumpkin Ravioli [we also love the Brussel Sprout + Caramelized Onion ++ the Butternut Squash Ravioli] 

— Sweet Apple Chicken sausage

— Harvest Chili

— Vegan Kale, Cashew + Basil Pesto

— Broccolini

— Apricot, Cherry, Cranberry, Goat’s Milk Cheese

— Eggs

— Avocado

 

Dry Goods //

— Fall Zucchette Pasta

— Pumpkin Tortilla Chips

— Raw Walnut Halves + Pieces

— Fall Harvest Salsa

 

1] PUMPKIN PASTA

Bring a pot of water to a boil + cook the Fall Zucchette Pasta as instructed on the package. Defrost about ⅓ cup of peas + combine with the pasta + Vegan Kale, Cashew + Basil Pesto. 

 

2] BRUSSEL BOWL

In an oiled skillet, add 1-2 cups of shredded brussel sprouts and a sliced Sweet Apple Chicken Sausage. Once they are both browned, add Petite Peas and cook until thawed [about another minute]. Finally, add some Raw Walnut Halves + Pieces, Apricot, Cherry, Cranberry, Goat’s Milk Cheese + some salt ++ pepper.

 

3] RICED CAULIFLOWER + BUTTERNUT SQUASH RISOTTO

Cook as directed on package + add some Petite Peas for a pop of freshness! 

 

4] HARVEST CHILI 

Heat up a bowl of the Harvest Chili + enjoy with a side of Pumpkin Tortilla Chips : )

 

5] FALL EGG FIESTA

Scramble 2-3 eggs in a skillet + add a spoonful of Fall Harvest Salsa just before removing them from the pan. Add your eggs on top of a plate of Pumpkin Tortilla Chips + add half an avocado.

 

6] SWEET PUMPKIN RAVIOLI  Boil the Sweet Pumpkin Ravioli as directed on the package. While it is cooking, cook a few speers of Broccolini in an oiled skillet with salt + pepper. Serve with a bit of olive oil, butter or ghee. 

 

7] BUTTERNUT SQUASH PIZZA

Bake the Butternut Squash Pizza Crust as directed on the box. Once it’s cooked, top with Vegan Kale, Cashew + Basil Pesto, a sliced Sweet Apple Chicken Sausage + Apricot, Cherry, Cranberry Goat’s Milk Cheese. Put your pizza back in the oven until the toppings are cooked + the edges of the crust start to crisp.
