Vegetables for Dessert — Zucchini Brownies

INGREDIENTS
- 1 cup Zucchini [approx. 1 large zucchini]
- ⅓ cup Natural Peanut Butter [can sub with any nut butter or sunbutter to make nut-free!]
- ¼ cup Pure Maple Syrup
- 1 Egg
- ½ cup Unsweetened Applesauce
- ½ tsp Vanilla
- ½ cup Unsweetened Cacao Powder
- ½ cup Oats
- ½ tsp Baking Soda
- ¼ tsp Cinnamon
- ¼ tsp Salt
- ⅓ cup Dark Chocolate Chips
DIRECTIONS
#1] Preheat oven to 350 degrees
#2] Spray 9×9 brownie pan with nonstick spray or coat pan with coconut oil
#3] Finely shred zucchini
#4] Finely grind oats using a blender or food processor
#5] Combine all ingredients except chocolate chips in a large bowl or mixer + stir until well combined
#6] Fold in chocolate chips
#7] Pour batter into pan + sprinkle a few chocolate chips on top
#8] Bake for 20-25 minutes
#9] Let cool + serve
Store leftovers [if there are any!] in the refrigerator for up to a week. These brownies are so good you’ll be running back to the grocery store again + again to snag all of the ingredients needed for these decadent zucchini brownies!
