Vegetables for Dessert — Zucchini Brownies

What if we told you that you could transform a vegetable into a rich, chocolate brownie? If you’re looking for a gluten-free, dairy-free, refined sugar-free way to indulge in your sweet tooth while also eating your veggies, look no further.


  • 1 cup Zucchini [approx. 1 large zucchini]
  • ⅓ cup Natural Peanut Butter [can sub with any nut butter or sunbutter to make nut-free!]
  • ¼ cup Pure Maple Syrup
  • 1 Egg
  • ½ cup Unsweetened Applesauce
  • ½ tsp Vanilla
  • ½ cup Unsweetened Cacao Powder
  • ½ cup Oats
  • ½ tsp Baking Soda
  • ¼ tsp Cinnamon
  • ¼ tsp Salt
  • ⅓ cup Dark Chocolate Chips


1] Preheat oven to 350 degrees
2] Spray 9×9 brownie pan with nonstick spray or coat pan with coconut oil
3] Finely shred zucchini
4] Finely grind oats using a blender or food processor
5] Combine all ingredients except chocolate chips in a large bowl or mixer + stir until well combined
6] Fold in chocolate chips
7] Pour batter into pan + sprinkle a few chocolate chips on top
8] Bake for 20-25 minutes
9] Let cool + serve

Store leftovers [if there are any!] in the refrigerator for up to a week. These brownies are so good you’ll be running back to the grocery store again + again to snag all of the ingredients needed for these decadent zucchini brownies!
