Girls — this is the best food find ever. Big shout-out to my roommate + BFF + Penn State CHAARG Ambassador Alyssa on this one.
Everyone has a sweet tooth for something + mine will forever be dark chocolate. I add it into my granola, my yogurt, + now into these *cookie dough* bites. Why in quotes? Because it’s not actually cookie dough. There are four main ingredients that make up these bad boys + all of them are whole foods.
With #runCHAARG just ending + my half marathon training two weeks in now [woo!], these little bites have been perfect snacks to either have one on-the-go to a meeting, a nutritious dessert after dinner, or even a handful for breakfast! When Alyssa told me about these, I was totally skeptical. Now? I’ve made three batches in the past two weeks. They’re so, so, SO worth the time to make.
2/3 cup Cashews
1/3 cup Rolled Oats
1 tsp Vanilla
3 tbsp Agave Sweetener [you can also use honey!]
*Dark Chocolate Chips [make sure they’re vegan if you want to go completely vegan on these!]

1] Use a food processor to blend together the cashews + rolled oats. Blend them together until the pieces are completely ground.
