Vanilla Cran-Coco Bites

We may be challenging you guys to run outside in freezing cold temps [who’s participating in #runCHAARG?], but that doesn’t mean we can’t have a lil’ taste of summer in our lives. I love coconut because it reminds me so much of summer. These vanilla cran-coco bites get a hearty kick from the oatmeal + protein making them a super filling snack that’s also just a little bit sweet. The best part about these little bites? They are super quick to make + really easy to take on-the-go! Perfect to pop in your mouth after a run : )

INGREDIENTS

1/2 cup + 2 tbsp Rolled Oats

¼ cup Unsweetened Coconut Flakes

2 tbsp Flax Meal

¼ cup Vanilla Protein Powder

6 tbsp Almond Butter

¼ cup Dried Cranberries

3 tbsp Honey

1 tsp Vanilla Extract

Vanilla-Cranberry-Coconut-bites-ingredDIRECTIONS

#1] In a large bowl, combine all of the dry ingredients until well mixed. Add in the the almond butter + honey + vanilla ++ stir until a dough forms.

#2] Form the dough into balls, packing each tightly.

#3] Store the protein bites in the fridge. ++ ENJOY : )
