My love for avocado toast runs deep, immeasurably deep! So incredibly versatile that it tastes equally amazing with eggs, veggies, or anything else you could possibly dream of — avocado is a magical fruit! Though avocado toast is a breeze to make + is insanely delicious, it’s definitely a food that needs a little dressing up to keep things interesting. This recipe gives a tropical twist to the standard avocado toast + is perfect for summer! The mango adds the perfect amount of sweetness to the creamy + savory avocado + the coconut provides a little extra crunch I think you’ll love! I can’t wait to hear what you think : )
½ cup of sliced Mango
2 slices of Bread
1 tsp Coconut Oil
1 tbsp Shredded Coconut
Salt to taste
1] Preheat the oven to 400℉ + line a baking sheet with parchment. Spread the coconut oil on both sides of the bread, sprinkle with a pinch of salt + pop into to the oven. Bake the bread until it is golden brown + crisp, about five minutes per side. Feel free to double or triple the bread + coconut oil if you want to prepare extra for the upcoming week!
2] Mash the Avocado with a fork + sprinkle with a pinch of salt.
3] Spread the avocado on the toast + top with the sliced mango. Sprinkle on the shredded coconut + eat up!
