Tropical Avocado Toast
My love for avocado toast runs deep, immeasurably deep! This recipe gives a tropical twist to the standard avocado toast + is perfect for summer! The mango adds the perfect amount of sweetness to the creamy + savory avocado + the coconut provides a little extra crunch.
- ½ cup of sliced Mango
- ½ Avocado
- 2 slices of Bread
- 1 tsp Coconut Oil
- 1 tbsp Shredded Coconut
- Salt to taste
#1] Preheat the oven to 400℉ + line a baking sheet with parchment. Spread the coconut oil on both sides of the bread, sprinkle with a pinch of salt + pop into to the oven. Bake the bread until it is golden brown + crisp, about five minutes per side. Feel free to double or triple the bread + coconut oil if you want to prepare extra for the upcoming week!
#2] Mash the Avocado with a fork + sprinkle with a pinch of salt.
#3] Spread the avocado on the toast + top with the sliced mango. Sprinkle on the shredded coconut + eat up!
