The BEST Banana Muffins

These banana muffins make the PERFECT breakfast bite with your morning coffee, a midday snack, or even a post-workout snack!

When thinking about ingredients for your muffins, try to stick to whole-grain flours as they retain all layers of the grain — they’re a good source of fiber, vitamin B6, + magnesium which help with digestion! Use coconut oil for added vitamins + minerals ++ cinnamon to help reduce inflammation over time. Bananas contain a good source of protein, which is essential for the growth, repair, + recovery of muscle.The added bananas help restore the glycogen lost during a workout +  help our muscles recover. Who knew a muffin could be so healthy?!

INGREDIENTS

3 ripe bananas [mashed] ⅓ cup coconut oil [melted] 2 egg whites [whisked] 1 tsp vanilla extract
½ cup coconut sugar
1 ½ cups white whole wheat flour
1 tsp cinnamon
1 tsp baking soda
½ tsp baking powder
1 cup mini dark chocolate chips OR cinnamon chips ; )

DIRECTIONS

#1] Mix all ingredients together + portion in sprayed muffin cups
#2] Bake 15-18 minutes or until tops are lightly golden // pass the toothpick test
#3] Cool slightly + remove from pan to cool completely on rack
