Thai Chicken Lettuce Wraps

Whether you’re a spicy fiend or not, these lettuce wraps may soon become one of your favorites meals for how simple they are to prepare — not to mention, a great source of protein. These wraps can be prepared for the week ahead to make lunchtime easy — just chop//prep + store each in ingredient in a separate container ++ assemble when ready to eat!

INGREDIENTS

1 cup Carrots [chopped] 1 Bell Pepper [chopped] 1 Cucumber [chopped] 1 bunch Cilantro
1 lb Cooked Chicken Breast
1 head of Lettuce
1 Lime [for juice] *For the spicy peanut sauce
4 tbsp Honey Peanut Butter
1 tbsp Soy Sauce
1 tbsp Sriracha
1/4 tsp Garlic Powder
3 tbsp Water

DIRECETIONS

#1] Wash + chop all veggies. Combine all ingredients for the spicy peanut sauce in a small bowl + whisk together.

#2] Assemble your lettuce wrap, serve with a side of spicy peanut sauce [+ maybe an extra drizzle of sriracha ; )] ++ eat up!
