Sweet + Salty Caramel Corn
This caramel corn recipe is the perfect snack to make + share will watching a holiday movie or binging the newest Netflix series ; )
INGREDIENTS
- 1 tablespoon Coconut Oil [could use olive oil if needed]
- ⅓ cup Popcorn Kernels
- ⅓ cup Maple Syrup
- ⅓ cup Honey
- ½ tsp Salt
- ½ tsp Vanilla
- Chocolate Sauce
- 4 tablespoons Melted Coconut Oil
- 2 tablespoons Maple Syrup
- 3 tablespoons Raw Cacao Powder [can use regular cocoa powder]
- 1 tsp Vanilla
DIRECTIONS
#1] In a 4 quart saucepan, place 1 tablespoon of coconut oil + melt it over high heat. Place 1-2 kernels in while the oil is melting — when these kernels pop, you’ll know it’s ready to add the rest of the popcorn!
#2] Add the rest of the kernels + shake the pan often to distribute them evenly over the heat. Once the kernels start popping, lower the heat a little bit + listen for the popping to slow. When the popping slows, turn the heat off + leave covered for a few minutes to finish popping
#3] Pour the popcorn into a large bowl that is covered with cooking spray. Remove any kernels that didn’t pop
#4] In your empty popcorn pan, add the maple syrup, honey, vanilla, + salt. Turn the heat to medium + warm the caramel sauce until everything has blended together
#5] Pour the caramel mixture over the popcorn in the bowl + stir to mix it all together
#6] Make the chocolate sauce by melting the coconut oil + then whisking the maple syrup, melted coconut oil, maple syrup, raw cacao powder, + vanilla in a saucepan
#7] Drizzle 1 cup of the blended chocolate sauce over the popcorn + mix in
#8] Allow the caramel corn to cool if needed for 5-10 minutes. Then, dig in!
