Stuffed Turkey Peppers Recipe

Stuffed peppers are the perfect fall + winter recipe that you can enjoy now + save for later in the week! They are great for meal prep + you can even freeze them to reheat. Check out how to make this delicious meal —

INGREDIENTS // 

— 4 Bell Peppers [Red, Yellow, or Orange!] — look for round ones when shopping
— Brown Rice [Can substitute with quinoa] — 1 lb. Ground Turkey [Can substitute with black beans, ground chicken or ground beef] — Mexican blend cheese [Can be left out to be made dairy free] — 1 Small Onion
— Petite Diced Tomatoes
— 1 Tsp Garlic salt
— Pepper to taste
— 1 tsp Cumin
— Aluminum Foil
— Round baking dish

DIRECTIONS // 

— Preheat oven to 350 degrees
— Cook ground turkey over medium heat until mostly browned [it will finish cooking in the oven so it shouldn’t be 100% done!] — Meanwhile, boil rice or quinoa according to directions
— Slice tops off of the peppers + set aside
— Dice onion into ¼ inch cubes
— Mix ¼ cup of cheese, onion, garlic salt, cumin + pepper, rice + can of petite diced tomatoes
— Use a spoon to fill the peppers with the above mixture + press down with each scoop to maximize the space
— Once filled, place peppers in a dish, making sure all peppers are stabilized from falling over
— Top off each pepper with cheese, if desired
— Cover with a sheet of aluminum foil
— Cook for 10 minutes, or until cheese is melted and pepper is no longer completely raw
— Serve + enjoy!
