Black Bean + Quinoa Stuffed Peppers
This is a quick + easy recipe for vegetarian stuffed peppers! They’re packed with protein from the quinoa + beans. We love love love stuffed peppers for a few reasons:
a] They are delicious + so versatile!
b] They’re super simple to meal prep
c] They’re packed with nutrients!
Time: 10 minutes to prep, 40 minutes to cook
*Makes three peppers
— 3 peppers
— 1 cup Quinoa [cooked] — 1 can Black beans
— 1 can Corn
— ½ Red Onion
— 1 tbsp Cilantro [chopped] — ½ Tsp Cumin
— Salt + Pepper To Taste
— Optional: avocado/salsa!
*Preheat oven to 350
1] Cook quinoa according to the directions [or make ahead of time to save time!] 2] Chop onion + cilantro
3] Rinse black beans/corn, then add to a medium sized mixing bowl. Also add onion, cilantro, quinoa, cumin, + garlic powder
4] Cut tops off the peppers + spoon out the inside [like a pumpkin ; )] + scoop filling into the peppers
5] Line a baking sheet [or a casserole dish!] with foil + add peppers [cover the peppers with another sheet of foil to prevent burning!] 6] Cook at 350 degrees for 40 minutes
7] Serve with avocado, guacamole, or your fav salsa! *Wrap peppers individually in foil + store in fridge for up to 4 days!
