Black Bean + Quinoa Stuffed Peppers
This is a quick + easy recipe for vegetarian stuffed peppers! They’re packed with protein from the quinoa + beans. We love love love stuffed peppers for a few reasons:
A] They are delicious + so versatile!
B] They’re super simple to meal prep
C] They’re packed with nutrients!
Time: 10 minutes to prep, 40 minutes to cook
*Makes three peppers
INGREDIENTS
- 3 peppers
- 1 cup Quinoa [cooked]
- 1 can Black beans
- 1 can Corn
- ½ Red Onion
- 1 tbsp Cilantro [chopped]
- ½ Tsp Cumin
- Salt + Pepper To Taste
- Optional: avocado/salsa!
DIRECTIONS
*Preheat oven to 350
#1] Cook quinoa according to the directions [or make ahead of time to save time!]
#2] Chop onion + cilantro
#3] Rinse black beans/corn, then add to a medium sized mixing bowl. Also add onion, cilantro, quinoa, cumin, + garlic powder
#4] Cut tops off the peppers + spoon out the inside [like a pumpkin ; )] + scoop filling into the peppers
#5] Line a baking sheet [or a casserole dish!] with foil + add peppers [cover the peppers with another sheet of foil to prevent burning!]
#6] Cook at 350 degrees for 40 minutes
#7] Serve with avocado, guacamole, or your fav salsa! *Wrap peppers individually in foil + store in fridge for up to 4 days!
