Strawberry Power Muffins

Summer is [unofficially, officially] here! If you’re spending your summer with one foot into the real world [or both for post-grads!], you may be like me + find yourself dreading your alarm each morning [note to self: read Morgan’s 8 Ways To Become a Morning Person #Wannabe6AMCrew]. I’m not a morning person at all, so I like to time my mornings so I can get ready + make it to work on time while still maximizing sleep. Because of that, I’m not left with a lot of time for a good breakfast each morning. Enter, Strawberry Power Muffins!

I love low maintenance breakfasts that I can grab on the way out the door. When I need a change from my overnight oats, I whip up a batch of muffins. These muffins are loaded with protein to help kick start your day + keep you full throughout the morning, but my favorite part is how customizable the recipe is! I usually make them with plain Greek yogurt, but feel free to experiment + try fruit flavors. They’re super quick, + they’re great on their own or warmed in the microwave with a scoop of peanut butter Greek yogurt *frosting.* YUUM.

INGREDIENTS

1 cup Whole Wheat Flour

1 cup Oat Flour [I put a cup of oats in a blender + ground it]

1 tbsp Baking Powder

1 tbsp Ground Flaxseed

1 tbsp Chia Seeds

.5 cup Truvia Baking Blend [or regular sugar!]

1.25 cup Plain Greek Yogurt

1 large Egg, beaten

4 tbsp Unsalted Butter, melted + cooled

1 tsp Vanilla Extract

1 [or more!] cup chopped Strawberries

 

For Honey Peanut Butter Frosting

¼ cup Plain Greek Yogurt

1 tbsp Creamy Peanut Butter

1 tsp Honey

Pinch of Cinnamon

DIRECTIONS

#1] Pre-heat oven to 350. In a large bowl, combine flours, baking powder, + chia seeds or ground flax.

#2] In a separate bowl, beat egg. Add sugar, yogurt, + butter individually.

Muffins4#3] Fold wet ingredients into flour mixture + then carefully fold in strawberries.

Muffins6#4] Spoon mixture into lined or greased muffin tin. Bake until muffins are golden brown + fully cooked when poked with a knife, usually 20-25 minutes.

#5] While muffins are baking, mix frosting ingredients.

#6] Top with frosting + extra strawberries.

#7] ++ of course, ENJOY! Store in an airtight container for about a week [if they last! ; )] or pop in freezer for a longer life!
