Strawberry Mango Avocado Bruschetta
Ah it’s *FINALLY* spring — I could cry with happiness [#butreally]! Spring to me is all about fresh fruits, especially tropical fruits! We’re bringing you a bruschetta recipe that will have you in a springtime mood in no time! Bruschetta is one of my favorite anytime of day foods! It always looks amazing + it’s seriously the fastest + easiest recipe ever [hooray for fancy toast]!

It always looks amazing + it’s seriously the fastest + easiest recipe ever [hooray for fancy toast]!
This recipe can be easily adjusted for how many people you’re serving! Dinner for one? Use about half the amount of each ingredient. Party for your CHAARG girls? [ ; )] Increase the amount of each ingredient as needed! So — call over your girls + treat them to dinner + impress them with your amazing cooking skills! Can’t wait to hear what you think!
INGREDIENTS
1 cup Strawberries [diced]
1 cup Mango [diced]
1 Avocado [diced]
1 cup Balsamic Vinegar
Juice of 1 Lime
½ bunch of Basil [roughly torn]
1 tbsp Olive or Coconut oil
4 oz Goat Cheese
6-8 slices of Whole Grain Bread or Baguette
Salt + Pepper to taste
*serves approx. 2-3*
DIRECTIONS
#1] Preheat the oven to 400 degrees + line a baking sheet. Brush both sides of the bread with the oil + sprinkle on lil’ salt + pepper. Bake until golden on the outside, but soft on the inside — about five mins per side. At the same time, in a small sauce pan, warm the balsamic vinegar on medium-high heat. Bring to a boil + reduce the heat to a simmer + let the vinegar simmer on medium-low for about 10-15 minutes or until it is the consistency of honey. Remove from the heat + let cool!
#2] Combine the basil leaves, strawbs, mango + avo in a medium sized bowl. Drizzle with lime juice + salt + pepp to taste. Stir gently to mix the fruit, but making sure not to smash the avocado.
#3] Once the bread is golden, remove from oven + spread goat cheese on each slice of warm toast.
#4] Top with the fruit mixture.
#5] Drizzle some of the reduced balsamic vinegar on each slice + season with salt + pepp!
