Strawberry Coconut Chia Pudding
For us busy college girls, summer brings the chance to finally focus on relaxation + the opportunity to learn something we’re interested in, but don’t usually have time for. For some of you, that new skill may be cooking! Whether you’ve been cooking for years, or you’re just beginning — I highly recommend this recipe! This chia seed pudding is amazingly simple [it can even be made overnight] ++ it lets the fresh taste of summer produce shine! Plus — nothing screams summer more than eating directly from a fresh coconut bowl ; )
INGREDIENTS
- *makes 3-4 servings
- 6-8 large Strawberries [about 2 cups]
- 1 cup Coconut Milk
- 1/2 cup Coconut Greek Yogurt
- 1 tsp Vanilla Extract
- ¼ cup Chia Seeds
- 1 tbsp Shredded Coconut
DIRECTIONS
#1] Remove the stems from the strawberries + toss into a food processor along with the coconut milk, yogurt + vanilla extract. Puree the mixture until completely smooth.
#2] Pour the pureed strawberry mixture into a large bowl, add in the chia seeds + stir to mix! Let the mixture soak for at least twenty minutes, if not overnight so that the chia seeds will form a pudding.
#3] Spoon the chia pudding mixture into a bowl , or a coconut if you’re feelin’ summery 😉 Top with sliced strawberries + sprinkle on some shredded coconut. Eat up!
