10 Minute Strawberry Cheesecake Bites

Summer is just around the corner + this means strawberries are almost in peak season [April-June.] When the weather gets warmer we tend to want ALL the fruits. These cheesecake stuffed strawberries are quick, easy, + fun. Bring them to your next small group session as a post-sweat snack or invite some CHAARGies over for a strawberry cheesecake bar by laying out different toppings to sprinkle on top!


  • 15 Strawberries [the bigger, the better]
  • 8oz. Cream Cheese [softened] or Homemade Coconut Cream Cheese for a healthier option [ingredients + directions below]
  • 4tbsp Powdered Sugar
  • 1tsp Vanilla Extract
  • ¼ cup Graham Cracker Crumbs
  • cup Semi-Sweet Chocolate Chips


#1] Hollow out the strawberries using a small spoon
#2] Beat the cream cheese, powdered sugar, + vanilla extract in a medium bowl until creamy//fluffy
#3] Fill a ziplock bag with the mixture, then snip off a corner of the bag + pipe into the hollow strawberries
#4] Crush the graham crackers
#5] Melt the chocolate chips
#6] Garnish the cheesecake filled strawberries with graham cracker crumbs +drizzled chocolate

For Coconut Cream Cheese


  • 14oz. Coconut Cream [usually found in a carton]
  • ½ tsp Fresh Squeezed Lemon Juice
  • 1 pinch Sea Salt


#1] Spoon only solid part of coconut cream into a mixing bowl [the liquid part can be saved + makes a great addition to smoothies!] #2] Add lemon juice + sea salt ++ beat with an electric mixer until creamy
#3] Refrigerate until firm
