Sriracha Tofu Lettuce Wraps

Finding ways to protein into your lunch is difficult, especially if you are not much of a meat eater. Tofu may sound//look intimidating, but it’s a great source of protein ++ isn’t difficult to prepare!

These lettuce wraps can be prepared for the week ahead to make lunchtime easy — just chop//prep + store each in ingredient in a separate container ++ assemble when ready to eat.

INGREDIENTS

1 Cucumber [chopped]

1 cup Carrot [shredded]

1 Bell Pepper [chopped]

1 bunch Cilantro

2 Limes [*optional]

1 bunch Lettuce [Kale, Romaine, Collard Greens, or Chard work great!]

1 package Firm Tofu [chopped]

1 tbsp Olive Oil
for the marinade
1 tbsp Honey
3/4 tbsp Sriracha
2 tbsp Soy Sauce
1/4 tsp Salt
1/4 tsp Garlic Powder

DIRECTIONS

#1] Combine all ingredients for the marinade into a bowl + whisk. Place tofu into the bowl to marinade for 30 minutes.

#2] Add the oil to a pan + cook the tofu on medium heat until golden brown + slightly crisp. Wash + chop all other ingredients.

#3] Assemble your lettuce wrap, serve with a side of soy sauce or sriracha ; ) ++ eat up!
