Spicy Peanut Zoodles

After struggling to fit in my veggies this week I decided to go out + pick up one of those nifty Spiralizers + I AM SO EXCITED. I literally want to spiralize everything. I wanted to share my first zoodle [zucchini noodle] recipe with you. I went with a peanut sauce made with one of our fav things – sriracha! ; ) It’s super easy to make + can be thrown on just about anything.

INGREDIENTS

  • 1 Zucchini – spiralized
  • 1/3 cup Carrots – spiralized or shredded
  • 1/3 cup Cabbage – thinly sliced
  • *optional — peanuts + green onion to garnish

For the peanut sauce

  • ¼ cup Peanut Butter
  • 1 tbsp Canola Oil
  • 1 tbsp Honey
  • 1 tbsp Sriracha — or a little more ; )
  • 1 ½ tsp Fresh Ginger – Grated
  • 2 tbsp Rice Vinegar
  • 2 tbsp Low Sodium Soy Sauce
  • Juice from ½ a Lime

DIRECTIONS

#1] Whisk all sauce ingredients together in a small bowl.
#2] Sauté spiralized zucchini in a small amount of water until slightly softened.
#3] Toss zucchini, carrots, cabbage, + 2 tbsp peanut sauce [or more!] together + enjoy!

*Note: Ingredients are for one serving of zoodles, but the recipe makes a little over half a cup of peanut sauce – yay leftovers!
