Spicy Peanut Zoodles

After struggling to fit in my veggies this week I decided to go out + pick up one of those nifty Spiralizers + I AM SO EXCITED. I literally want to spiralize everything. I wanted to share my first zoodle [zucchini noodle] recipe with you. I went with a peanut sauce made with one of our fav things – sriracha! ; ) It’s super easy to make + can be thrown on just about anything.


1 Zucchini – spiralized

1/3 cup Carrots – spiralized or shredded

1/3 cup Cabbage – thinly sliced

*optional — peanuts + green onion to garnish


¼ cup Peanut Butter

1 tbsp Canola Oil

1 tbsp Honey

1 tbsp Sriracha — or a little more ; )

1 ½ tsp Fresh Ginger – Grated

2 tbsp Rice Vinegar

2 tbsp Low Sodium Soy

Juice from ½ a Lime


#1] Whisk all sauce ingredients together in a small bowl.


#2] Sauté spiralized zucchini in a small amount of water until slightly softened.

#3] Toss zucchini, carrots, cabbage, + 2 tbsp peanut sauce [or more!] together + enjoy!

*note — ingredients are for one serving of zoodles, but the recipe makes a little over half a cup of peanut sauce – yay leftovers!
