Roasted Sweet Potato + Pomegranate Salad

If you haven’t tried pomegranate seeds on your salad yet, prepare to have your life changed [forever ; )]. The ingredients in this salad intertwine to create is a combo or sweet + tart flavors — perfect for spring!

INGREDIENTS

*for the salad [makes 2 servings] 

1 Sweet Potato

1 Honeycrisp Apple

3 cups Arugula

¼ cup Pomegranate Seeds

¼ cup Pumpkin Seeds

¼ cup Feta Cheese

*for the dressing

¼ cup Lemon Juice

2 tbsp Apple Cider Vinegar

2 tbsp Olive Oil

Salt + Pepper to taste

DIRECTIONS

1] Preheat the oven to 375℉, slice or dice the sweet potato, + pop in the oven for about 20 minutes. If you don’t have access to an oven, you can microwave the sweet potato instead!

2] Slice the apple + whisk together all ingredients for the dressing  ++ Assemble your salad!
