Roasted Sweet Potato + Pomegranate Salad

If you haven’t tried pomegranate seeds on your salad yet, prepare to have your life changed [forever ; )]. The ingredients in this salad intertwine to create is a combo or sweet + tart flavors — perfect for spring!


For the salad

  • 1 Sweet Potato
  • 1 Honeycrisp Apple
  • 3 cups Arugula
  • ¼ cup Pomegranate Seeds
  • ¼ cup Pumpkin Seeds
  • ¼ cup Feta Cheese

For the dressing

  • ¼ cup Lemon Juice
  • 2 tbsp Apple Cider Vinegar
  • 2 tbsp Olive Oil
  • Salt + Pepper to taste



#1] Preheat the oven to 375℉, slice or dice the sweet potato, + pop in the oven for about 20 minutes. If you don’t have access to an oven, you can microwave the sweet potato instead!
#2] Slice the apple + whisk together all ingredients for the dressing  ++ Assemble your salad!
