We are at the peak of the fall season! AKA the leaves are lookin’ their finest oranges, yellows, + reds, + the temperature is cooling down but still not *too* chilly. When the fall season is at its peak, you know there’s one food we can’t get enough of — pumpkin, of course ; ). Beyond its delicious flavor, pumpkin offers a lot of other health benefits — it’s high in fiber, loaded with potassium + contains lots of beta-carotene, which converts into Vitamin A + helps boost your immune system.
The part of the pumpkin that is often left forgotten is also one of the most versatile + delicious snacks to prepare — the seeds! Roasted pumpkin seeds are super easy to make, great on-the-go snacks + can be flavored to satisfy your sweet tooth or salty cravings : ). You can roast the perfect pumpkin seeds in 6 easy steps:
2 cups Pumpkin Seeds
2 tbsp Coconut Oil
½ tsp Salt
1] Heat your oven to 325 degrees.
2] Carefully cut the top off the pumpkin. Scoop the seeds out of the pumpkin + place into a large bowl.
3] Wash the pumpkin seeds + lay them out to dry on a kitchen towels for 30-60 minutes.
4] Once dried, add the seeds in a medium-sized bowl + toss with oil, salt + other desired seasonings.
5] Spread in a single layer on a baking sheet + bake for 25 minutes. We recommend checking + stirring the seeds after 15 minutes, until the seeds are golden brown.
6] Once they are golden brown, remove the baking sheet from the oven + let them cool for 5-10 minutes.
2 tbsp Sriracha
2 tbsp Honey
½ tsp Smoked Paprika
½ tsp Ginger
¼ tsp Cumin
Mix together the ingredients above while the pumpkin seeds are baking. After 15 minutes in the oven, take out the seeds + toss with the sauce. Place back in the oven for 10 minutes, stirring every 5 minutes.
SWEET// CINNAMON SUGAR
3 tbsp Cinnamon Sugar
¼ tsp Ginger
⅛ tsp Nutmeg
1 tbsp brown sugar for dusting on top after baking [*optional]
Toss the seeds with the mixtures + bake according to the directions above. After they are done baking, dust with brown sugar + granulated sugar as they cool.
SAVORY// GARLIC PEPPER
1 Batch roasted pumpkin seeds
½ tsp ground black pepper
1 tsp garlic powder
Simply add ½ tsp ground black pepper + 1 tsp garlic powder to the original recipe above + make as directed.
After baking, bag them up + enjoy for one week! Happy snacking : ).
