Rainbow Wrap

This wrap is a tasty + simple way to #EatYourColors! We were inspired by a wrap in the premade aisle at Trader Joe’s + had to recreate it. It’s a very low-maintenance lunch that you can make/pack ahead of time. 

Time: 10 minutes
*Makes two wraps 


  • 1 Spinach or Whole Grain Tortilla
  • 2 Beets
  • 1 Sweet Potato [Roasted]
  • ¼ cup Spinach
  • 2 tbsp Hummus
  • 2 tbsp Shredded carrots
  • 1 Avocado 


#1] Cook your sweet potato! You have two options based on how much time you have:

Option 1:
Preheat oven to 400 degrees. Chop Sweet Potato into bite sized pieces, toss in Olive Oil + Salt/Pepper, roast on a baking sheet for 40 minutes!

Option 2:
Pierce Sweet Potato several times with a fork. Put on a microwave safe plate + microwave on the *potato* setting or about 6 minutes. Once cooked all the way through, chop into bite sized pieces.

#2] Once sweet potato is cooked, get out all of the other ingredients to assemble
#3] Wrap tortillas in damp paper towels, put on a microwave safe plate, + heat for 20 seconds on high
#4] Assemble wraps! Spread 1 tbsp hummus on one tortilla, then layer: spinach, sweet potatoes, beets, carrots, + avocado.
#5] Wrap tightly + repeat for the other wrap!

*Store in fridge for up to 5 days
