Pumpkin Spice Oatmeal Cookies

 

It’s that time of year again! When Autumn rolls in you know what to expect — Pumpkin Spice EVERYTHING ; ). Of course we all love the lattes + the pies, but what if there was a healthier way to enjoy the delicious flavors of fall’s perfect spice? We’ve got ya covered ; ) — what  could be better than starting your day off with a pumpkin oatmeal cookie [with no *guilt* to follow]!

A cookie that you can eat for breakfast? You don’t have to tell us twice!

INGREDIENTS

  • ½ cup canned Pumpkin
  • 2 large Eggs
  • 1 cup Quick Oats
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • 1 tsp Baking Soda
  • cup Sunflower Seeds + Pistachios [combined]
  • cup crushed Almonds
  • ¼ cup light Brown Sugar
  • 2 tbsp Honey

DIRECTIONS

#1] Preheat oven to 350°F. In a medium bowl — combine all ingredients, except for the oats + nuts//seeds. Stir until the mixture is smooth + gently fold in the oats.

#2] Add sunflower seeds, pistachios, + almonds ++ stir until mixed fully.

#3] On a greased baking sheet, spoon the batter into thick cookie shapes [no bigger than your palm] + gently press with a wooden spoon to flatten the tops.

#4] Bake for about 20 minutes [check after 15 mins] + let cool… or don’t. ; )

These taste great when warmed up or cool — perfect for both those on-the-go mornings, as well as  relaxing weekend mornings with a cup of coffee. Feel free to change up the ingredients to your liking + be sure to tag #CHAARGeats + @chaarg on Insta :)!
