Pumpkin Pie Protein Bites
These pumped up protein bites combine a lil’ flavor of summer with a taste of fall! The sweet coconut + the spice from pumpin just might be my new favorite flavor combo! These protein bites are the perfect on the go snack to keep you full + satisfy your sweet tooth.! They can be also stored in the freezer if you make a large batch to snack on throughout the week. Yum!
INGREDIENTS
- 1 cup Nuts of Choice [I used almonds, but pecans or walnuts would be great, too!]
- 0.5 cup Pitted Dates
- 8 tbsp Pumpkin Puree
- 1 tbsp Almond Butter
- 8 tbsp Pumpkin Spice Protein
- 4 tbsp Unsweetened Coconut Flakes
- 1.5 tsp Vanilla Extract
- 3 tsp Pumpkin Pie Spice
*optional — you can roll the balls into chopped nuts or coconut flakes!
DIRECTIONS
#1] In a blender or a food processor blend the nuts until finely chopped. Add in the dates + blend until a sticky dough forms. Add in the remaining ingredients + blend into evenly combined! The mixture will be fairly sticky, so scoop it into a bowl place in the fridge to cool for a few minutes.
#2] Once the dough has cooled a bit you can begin rolling it into balls. I *highly* recommend rolling the protein bites in extra coconut flakes! Enjoy now or store them in the fridge to enjoy later! Can’t wait to hear what you guys think!
