Pumpkin Pie Overnight Oats

Ahhh, why yes — you can have your pie + eat it, too [even for breakfast ; )]. This breakfast is an easy way to get in protein + fiber to keep you satisfied + start your morning right.

INGREDIENTS

  • 1/3 cup Rolled Oats
  • 1/3 cup Unsweetened Almond Milk
  • ½ cup Plain Greek Yogurt [aim for something low in sugar — I used Fage Total Zero]
  • ½ Banana [mashed]
  • ¼ cup Pumpkin Puree
  • ½ tsp Pumpkin Pie Spice
  • 1 tbsp Flax
  • 1 tsp Honey

*optional toppings: Graham Crackers, Pecans, Pepitas, etc.

DIRECTIONS

#1] Combine all of the above in a mason jar + refrigerate overnight!
#2] In the morning can sprinkle on you toppings — I went with graham crackers for a pie crust effect! [ ; ) ] #3] Rejoice as you enjoy a pumpkin pie flavored brekky!
