Pumpkin Chip Muffins

These pumpkin chip muffins are the perfect addition to your morning yogurt bowl or a sweet treat during the day. Inspired by these muffins from Well Plated!

INGREDIENTS

  • 1 1/2 cups Almond Flour [pro tip — buy this from Trader Joe’s if you have one in your city, it’s much more inexpensive!]
  • 1/2 tsp Salt
  • 3/4 tsp Baking Soda
  • 3 tsp Cinnamon
  • 4 Eggs
  • 3/4 Pumpkin [canned]
  • 1/3 cup Maple Syrup
  • 1 tsp Vanilla Extract
  • 1/2 cup Dark Chocolate Chips

DIRECTIONS

#1] Preheat oven to 350 degrees + either put liners in a muffin pan or coat with baking spray or coconut oil
#2] Combine all dry ingredients [flour, salt, baking soda, + cinnamon] in a large mixing bowl + mix well
#3] In a medium mixing bowl, combine all wet ingredients [eggs, pumpkin, maple syrup, vanilla extract] + whisk together
#4] Pour wet ingredients into bowl with dry ingredients + mix well until everything is incorporated
#5] Fold in chocolate chips
#6] Nearly fill each muffin cup in the pan with batter + bake for 22 minutes [until a toothpick will come out clean]
