Potato + Kale Soup

We are big fans of the kale + potato combo — this soup is perfect for cold days + it’s so easy to make! 3+ meals ready in 30 minutes? Sign us up. We also highly recommend adding Field Roast Grain Sausage [linked below!] for added protein + flavor. If that’s not your thing, feel free to add turkey sausage!

Ingredients:

  • 1 box Vegetable Stock
  • 1/2 Yellow Onion [chopped]
  • 2 Garlic Cloves
  • 2 cups Lacinato Kale [chopped into bite sized pieces]
  • 10 Fingerling Potatoes [halved + halved again]
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • Optional: 2 Field Roast Sausages [Smoked Apple Sage flavor]… completely meat-free sausage made from grains! If using — cut into very small pieces [slice the sausage + halve, then halve again]

Directions:

1] Heat 1 tsp olive oil in the bottom of a large pot + add onion. Cook for 2 minutes + add sausage [if using] + garlic. Continue to cook for 5 minutes
2] Add entire box of vegetable stock, garlic powder, salt/pepper, + potatoes
3] Bring to a boil, cover with a lid, + turn on low heat to simmer for 20 minutes
4] After 20 minutes, turn off stove, uncover, + stir in chopped kale
5] Let cool + enjoy! Store in the fridge for up to 5 days

*Should yield 3-4 servings!
