Pina Colada Quinoa Parfait

Pina Coladas definitely remind us of summer [have you tried our Pina Colada Smoothie?], but that coconut + pineapple flavor is great in many other forms — like this parfait!  Coconut water is low in calories + delivers more potassium than a banana + is full of electrolytes to help you stay hydrated. Once you try making quinoa with coconut water — you may never go back to your old ways ; ).

INGREDIENTS

*makes 6 servings

  • 1 cup Quinoa  [rinsed + drained]
  • 2 cups Coconut Water
  • 1 cup Coconut Greek Yogurt
  • 1 ¼ cup Pineapple, chopped
  • cup Coconut Flakes

DIRECTIONS

#1] Cook the Quinoa according the package directions, substituting the water for coconut water. Once the quinoa is finished cooking, set aside + fluff with a fork! While the quinoa cools down, chop the pineapple into bite sized pieces.
#2] Grab a mason jar + spoon in a layer of the cooled quinoa into the bottom of the jar. Continue by spooning in alternating layers of pineapple, coconut flakes + yogurt, until you reach the top!
#3] Screw on a lid + toss in your bag for a perfect to-go snack! I like to make a couple jars + store them in the fridge until I need a quick bite to eat!
