You might be thinking this one sounds a little strange, but the ingredients pack one healthy punch! The quinoa + greek yogurt have tons of protein that’ll keep you full + free from the temptation to hit the vending machine. Coconut water is low in calories + delivers more potassium than a banana + is full of electrolytes to help you stay hydrated! Once you try making quinoa with coconut water — you may never go back to your old ways ; ).
*makes 6 servings
1 cup Quinoa [rinsed + drained]
2 cups Coconut Water
1 cup Coconut Greek Yogurt
1 ¼ cup Pineapple, chopped
⅓ cup Coconut Flakes
1] Cook the Quinoa according the package directions, substituting the water for coconut water. Once the quinoa is finished cooking, set aside + fluff with a fork! While the quinoa cools down, chop the pineapple into bite sized pieces.
