Peanut Butter Power Bites

So — I was on my way home from the gym today + all I wanted was a candy bar [*wide eyeball emoji*]. Instead, I decided to pull out a couple power foods + whip up a lil’ something that can be used as a great post sweat sesh pick-me-up ++ satisfy my sweet tooth. You guys need to try this — you’ll never want a candy bar again.

This recipe truly is the perfect alternative to unhealthy//processed candy bars. These little squares are FULL of nutrients – healthy fats, a good amount of protein, fiber, + antioxidants. + not to mention, they’re super tasty : ) I apologize in advance if you can’t resist going back for seconds!

½ cup Chia Seeds

¼ cup Sunflower Seeds

1/3 cup Dry Roasted Almonds – chopped

1/3 cup Walnuts – chopped

¼ cup Cranberries

½ cup Cocoa Powder

1 cup Peanut Butter*

½ cup Honey*

Coconut oil – as needed to grease pan

*optional — 2 tsp Flax seed

*May need a little more honey depending on the peanut butter you use – I used one that must be kept refrigerated, so it was a little thinner.

#1] Grease an 8X8 pan with coconut oil.

#2] Mix all ingredients together – you might get an arm workout here *arm pump emoji*, things are a little sticky! This may take about 5-10 minutes to get everything combined. If the mixture seems too dry, add a splash of almond milk.

pb-mixture#3] Press evenly into the greased pan + chill for an hour. Cut into squares + dust with additional cocoa powder or coconut flakes [optional] + enjoy! Store bites in the refrigerator or freezer for later! YUUM.
