Peanut Butter Breakfast Cookie
Cookies for breakfast, anyone? YUP, this is real life. ++ let’s not forget about the peanut butter. This will satisfy your sweet tooth + your cravings for a healthy breakfast. ++ with all the different options for toppings, you’ll never get bored! It’s an easy breakfast to whip up the night before + pop in the microwave in the morning. I like to make mine on one large cookie, but you could also make four smaller cookies for a sweet snack!
- 1 tbsp Peanut Butter
- 3 Strawberries
- ½ Banana
- 1 Egg
- ½ cup Oat Flour
- ¼ tsp Baking Powder
- 1 tsp Cinnamon
- ¼ tsp Vanilla
- 1 ½ tbsp Honey
- 1/8 tsp Salt
#1] Preheat oven to 350° F + slice strawberries.
#2] Combine oat flour, baking powder, salt, + cinnamon in a bowl + set aside.
#3] Mash banana + combine with vanilla, egg, peanut butter, honey + strawberries in another bowl until thoroughly mixed.
#4] Combine wet + dry ingredients.
#5] Spread batter in a uniform circle on a cookie sheet coated in non-stick spray [or coconut oil!].
#6] Bake for 15-20 minutes [depending on how firm you’d like it] + top with all your favorite things!
