Peanut Butter Coconut Energy Bars
These bars are super quick + easy to throw together ++ they pack a punch. The protein from the peanut butter + oats is enough to keep me going until lunch rolls around. If you want a little something *extra*, these are amazing broken up + crumbled over some greek yogurt! They’re not *too* sweet but you can try adding a bit more honey ; )
INGREDIENTS
- 1.5 cups Steel Cut Oats
- 1 cup unsweetened Coconut
- 1 cup creamy Peanut Butter
- 2 Eggs
- 1/2 – 3/4 cup dried Cranberries
- 1/2 cup Chocolate Chips
- 2 tablespoons Honey
- 1 tablespoon Chia Seeds
- 1 tablespoon Ground Flax Seeds
DIRECTIONS
#1] Preheat the oven to 350 degrees. Mix the peanut butter + honey in large bowl.
#2] Add in the chia + flax seeds + stir to combine.
#3] Crack two eggs into the bowl + mix.
#4] At this point — the batter is kind of thick, so I think it’s easiest to add the coconut + cranberries next!
#5] Then finish with chocolate chips + oats!
#6] Line a baking dish with parchment paper + spread the batter in an even layer. Bake for 20 minutes + allow to cool completely before cutting.
