Peanut Butter Coconut Energy Bars
Whether you’re rushing off to class or work, your mornings may be about sleeping as long as possible [without being late] + grabbing a granola bar or yogurt to hold you over until you can find something else. But prioritizing a nutrient-dense breakfast can really makes a difference your day! Starting your morning feeling satisfied + energized, rather than sluggish + hungry, will make you much more productive throughout the day. Eating a solid breakfast doesn’t need to mean getting up extra early or going out of your way — it just takes a little preppin’!
These bars are super quick + easy to throw together ++ they pack a punch. The protein from the peanut butter + oats is enough to keep me going until lunch rolls around. If you want a little something *extra*, these are amazing broken up + crumbled over some greek yogurt! As a warning, they’re not *too* sweet. If you want your bars to satisfy a little more of your sweet tooth, try adding a bit more honey.
- 1.5 cups steel cut Oats
- 1 cup unsweetened Coconut
- 1 cup creamy Peanut Butter
- 2 Eggs
- 1/2 – 3/4 cup dried Cranberries
- 1/2 cup Chocolate Chips
- 2 tablespoons Honey
- 1 tablespoon Chia Seeds
- 1 tablespoon ground Flax Seeds
#1] Preheat the oven to 350 degrees. Mix the peanut butter + honey in large bowl.
#2] Add in the chia + flax seeds + stir to combine.
#3] Crack two eggs into the bowl + mix.
#4] At this point — the batter is kind of thick, so I think it’s easiest to add the coconut + cranberries next!
#5] Then finish with chocolate chips + oats!
#6] Line a baking dish with parchment paper + spread the batter in an even layer. Bake for 20 minutes + allow to cool completely before cutting.
