Pea Pesto, Chicken + Spinach Salad

It can be tough enough to pack protein into your meals, + finding a protein packed salad can be nearly impossible. So we created a salad that’s light + fresh in flavor but is sure to fill you up!


*makes 3-4 servings

  • 1 Lemon
  • 1/4 Marcona Almonds
  • 2 cups Peas [we recommend using defrosted, frozen peas]
  • 4 cups Spinach
  • 1/4 cup Parmesan Cheese
  • 1 large Chicken Breast [we recommend TJ’s Lemon-Pepper Chicken!]
  • 1/2 cup Pesto [we recommend TJ’s Pesto + Quinoa]


#1] Combine the pesto, parmesan cheese, peas + lemon juice in a bowl ++ stir to mix.
#2] Combine the pea pesto mixture with the spinach, top with chicken + almonds ++ eat up!
