PB+J Energy Bites

If you’re a PB+J lover, these are straight magic. The best part? They have FRESH fruit! You’ll want to snack on these all day long. They also make an amazing on-the-go breakfast!

Time: 10 minutes
*Makes 8-10 bites

Ingredients 

  • 1 cup Medjool Dates [pitted]
  • 5 Strawberries
  • 1/3 cup Peanut Butter [sub for any other nut butter or sunflower butter if you have allergies!]
  • 1 cup Rolled Oats [divided]
  • 1/4 cup Coconut Flakes
  • Bonus: add flax or chia seeds!

Directions

1] Cut strawberries in half
2] Add strawberries, dates, peanut butter, 1/2 cup oats, + coconut flakes to a blender/food processor + blend well [everything should be thoroughly combined]!

Once everything is well-incorporated, add the remaining oats [1/2 cup] + mix well with a spoon to give the bites more texture + help form them into bites

4] Roll into bite sized balls + store in the fridge for up to 4 days!
