PB Power Protein Pancakes

Protein pancakes can be the perfect substitute for when you are craving a stack of pancakes, but it can sometimes be tricky to find a consistency similar to a normal pancake. After a year of working + re-working this recipe, I’ve finally created the perfect mix of ingredients + proportions for smooth + yummy vegan-alternative, protein-packed pancakes — that won’t be too runny, oaty, or thick. Hurry to your kitchen to make this breakfast that will fill you up + fuel your day!

INGREDIENTS

  • 1 cup Almond Milk
  • 2 scoops PB Protein Powder [I use this!]
  • 2 Bananas [ripe + sliced]
  • 2 Eggs [sub applesauce if Vegan!]
  • 1 tsp Vanilla Extract
  • ¼ tsp Cinnamon
  • ¼ tsp Nutmeg
  • 1 cup Rolled Oats [I use these!]
  • ½ cup Flaxseed Meal [again, Bob’s Red Mill is my fav]

DIRECTIONS

#1] Add  all of the ingredients into a blender + blend until smooth. *Pro-tip* — When blending, start with all liquids at the bottom, then add powders, + finally solids [aka banana in this case]. This will yield the smoothest results.
#2] Pour ¼ cup of mix onto a skillet // griddle. Once the mix starts bubbling on one side, you’re good to flip it! You can poor leftover mix into a 24-oz mason jar + refrigerate to enjoy later. There will be enough for allllll the future breakfasts : )

BONUS — SYRUP

#1] Warm up some organic maple syrup from your pantry in a saucepan.
#2] Add blueberries + chia seeds in with the syrup to warm + make sure every last blueberry is covered with syrup.
