Peanut Butter Granola

Who wouldn’t want to receive some homemade granola for CHAARGmas –*hint hint*. This crunchy//peanut buttery goodness is irresistible. With the addition of three whole grains, this granola gets a bit of healthy make-over, but moderation is still key! : )


1 ½ cup Oats

½ cup Puffed Brown Rice [look for a zero sugar variety]

1/3 cup Buckwheat Groats

1/3 cup Peanut Halves

1/3 cup Dried Apricots

4 tbsp Peanut Butter

3 tbsp Honey

2 tbsp Coconut Oil

2 tsp  Vanilla Extract


#1] Preheat the oven to 350 degrees + line a baking sheet with foil. Dice up dried apricots + in a large bowl combine oats + puffed rice + buckwheat + peanuts. In a small sauce pan combine PB + honey +vanilla + coconut oil cook on very low heat for about 2 minutes, or until then PB melts down. Pour the wet ingredients over the dry ingredients + mix thoroughly!


#2] Spread granola evenly over the lined baking sheet and bake at 350 degrees for 20-25 minutes, or until golden brown. If you do not want large granola clusters, you can stir the granola once halfway through the 20-25 minutes to break it up. Let the granola cool + store in an airtight container.


#3] Try the granola with a bit of almond milk, or over top of some Greek yogurt paired with diced apple or banana. This recipe is large enough that you’ll have plenty to share! After all — this is the season of giving ; ). ENJOY.
