PB + Banana is one of my all-time favorite flavor combos — in smoothies, on toast, or in this amazing bread! This banana bread is super easy to make + is very filling, even after just one slice! 3 cups Oat Flour
3 tsp Baking Powder
¾ cup Unsweetened Vanilla Almond Milk
2 tsp Vanilla Extract
2 Bananas [speckled bananas are better!]
1 tbsp Chia Seeds [+4 tbsp Water]
*optional topping — ½ cup Peanuts [chopped]
1] Preheat oven to 350 degrees. Combine chia seeds + 4 tbsp water in a small bowl + stir. In a very large bowl — combine the oat flour + baking powder. Peel + smash the bananas in a separate bowl until there are no lumps. Add the PB + almond milk + vanilla extract + chia to the smashed bananas + mix it up. Pour the wet ingredients into the bowl with the dry ingredients + stir until the batter is evenly mixed.
2] Grease a loaf pan [I used coconut oil] // or line with parchment paper. Pour the batter into the loaf pan + sprinkle the chopped peanuts on top. Bake at 350 degrees for about 60 minutes [use a toothpick to check if center is fully cooked!].
