Parmesan Spaghetti Squash With Tomato + Basil

We all love the comfort + familiarity of our favorite pasta dish. If you’ve been searching for new + creative ways to make pasta a little bit healthier, we’ve got just the thing for you. This recipe is an awesome way to have both the convenience + deliciousness of pasta, as well as pack some extra veggies into your day. This recipe could not be easier!

INGREDIENTS

  • ½ Spaghetti Squash
  • ¼ cup Fresh Basil [chopped]
  • ⅓ cup diced Tomato
  • 2 tbsp grated Parmesan Cheese 
  • 2 tbsp Sunflower Seeds or Pine Nuts [whichever you prefer!]
  • Salt + Pepper to taste
  • *1/2 tbsp Olive Oil [optional]

DIRECTIONS

#1] Remove seeds and cover Squash with plastic wrap and microwave for about 10 minutes [it may take a little longer if you have a very large Squash]. After taking it out, let sit covered for 5 more minutes.
#2] Take a fork and gently tug at the Squash until it shreds apart into strands!
#3] Stir in Basil, Tomato + about ¾ of Parmesan cheese. Microwave for about 30 seconds.
#4] Remove from microwave + add the Sunflower Seeds // Pine Nuts. Top off with the remaining Parmesan Cheese + you’re ready to eat!
