Parmesan Cauliflower Mash
Maybe it’s the Southerner in me comin’ out but nothing beats a delicious bowl of mashed potatoes + gravy — it is absolutely the best comfort food around! When you’re on a health kick + trying to stay #inCHAARG, it’s hard to resist your favorite home cooked meals — until now! Did you know that you can make cauliflower mash [YUP] that tastes almost identical to mashed potatoes? Get ready to have your mind blown.
There are so many ways you can use cauliflower — this + the cauliflower pizza recipe are my absolute favorites. As someone who normally doesn’t care for cauliflower, I promise you can barely tell that this is a vegetable. ; )
1 medium head Cauliflower
¼ cup shredded Parmesan cheese
1 TBSP Lowfat Cream Cheese
¼ cup Plain, Nonfat Greek Yogurt
1 TBSP Garlic Powder
#1] Break the cauliflower florets off of the stalk + place in a food processor! Pulse until there is a “rice” like consistency. In a medium pot bring about 1 inch of water to a boil.
#2] Place the “rice” in the boiling water + cover and cook for 4-5 minutes [or until soft]. This cooking method is identical to our Cauliflower Crust Pizza Recipe!
#3] When the “rice” is cooked pour into a very fine sifter//colander + using a spoon push the cauliflower into the side, getting out as much excess water as possible.
#4] Place the cauliflower back into the food processor. Pour in parmesan cheese + cream cheese + greek yogurt + garlic powder + blend until smooth.
#5] Add in whatever seasonings you like to make it your own! I ended up adding in some basil + a dash of Everything Seasoning from Flavor God. Fresh rosemary would be also be great in this!
#6] Serve immediately + enjoy! [ps — pour a lil’ brown gravy over it + now you’re an official southerner ; )]
