Paleo Blueberry Banana Choco-Chip Muffins
These muffins are some of the softest + tastiest muffins you’ll ever have! Great for a breakfast treat on a snowy morning or for a snack on the go, you won’t be hungry while you have these around! They are also a great way to introduce your family to *paleo* baking ; )
Ingredients
- 4 Bananas
- 1 cup Blueberries
- 4 Eggs
- ½ cup Peanut Butter [or Almond Butter]
- 4 tbsp Grass Fed Butter
- ½ cup Coconut Flour [or Almond Flour]
- 1 tbsp Cinnamon
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1 tsp Vanilla
- Pinch of Sea Salt
- *Optional: ½ cup Chocolate Chips
Directions
#1] Preheat oven to 350 degrees
#2] Combine the bananas, eggs, nut butter, + grass-fed butter in a blender ++ mix well
#3] Add the coconut flour, cinnamon, baking soda, baking powder, vanilla, + sea salt into the blender + continue to mix well
#4] Empty into a bowl where you can fold in the blueberries [take care not to break them!]
#5] Pour your batter into muffin cups [either lined or greased]
#6] Put in the oven for 20 minutes! Check they are done by sticking a toothpick in the middle of a few + making sure it comes out clean ; )
#7] Allow to cool, then enjoy!
