Paleo Blueberry Banana Choco-Chip Muffins

These muffins are some of the softest + tastiest muffins you’ll ever have! Great for a breakfast treat on a snowy morning or for a snack on the go, you won’t be hungry while you have these around! They are also a great way to introduce your family to *paleo* baking ; )

Ingredients:

  • 4 Bananas 
  • 1 cup Blueberries 
  • 4 Eggs
  • ½ cup Peanut Butter [or Almond Butter] 
  • 4 tablespoons Grass Fed Butter
  • ½ cup Coconut Flour [or Almond Flour] 
  • 1 tablespoon Cinnamon
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder 
  • 1 teaspoon Vanilla
  • Pinch of Sea Salt 
  • *Optional: ½ cup Chocolate Chips 

Directions:

1] Preheat oven to 350 degrees
2] Combine the bananas, eggs, nut butter, + grass-fed butter in a blender ++ mix well
3] Add the coconut flour, cinnamon, baking soda, baking powder, vanilla, + sea salt into the blender + continue to mix well
4] Empty into a bowl where you can fold in the blueberries [take care not to break them!] 5] Pour your batter into muffin cups [either lined or greased] 6] Put in the oven for 20 minutes! Check they are done by sticking a toothpick in the middle of a few + making sure it comes out clean ; )
7] Allow to cool, then enjoy!
