Mint Matcha Truffles

We’ve been all about this combo recently — it is the perfect holiday twist on matcha! Of course, you can add mint extract to your next matcha latte [or add it to an iced latte to make it super refreshing!], but if you’re looking for a sweet treat — try these Mint Matcha Truffles! They only take about 10 minutes to make + only require six ingredients!

INGREDIENTS

— 4 oz Dark Chocolate Bar
— 4 tbsp Canned Coconut Milk [full fat!] — 1 tsp Peppermint Extract
— 1 Candy Cane [crushed] — 2 tbsp Matcha Powder
— 2 tsp Powdered Sugar

DIRECTIONS

1] Break Chocolate Bar into smaller pieces + add to a mixing bowl with Coconut Milk
2] Microwave on high for 30 seconds
3] Whisk mixture together until fully combined + mix in crushed Candy Cane + Peppermint Extract
4] Put in the fridge to set for ~30 mins
5] Combine Matcha + Powdered Sugar
6] Remove chocolate from the fridge, roll into bite sized balls, + roll in the bowl of the Matcha mixture until fully covered
7] Store in the fridge + ENJOY!
