Mexican Stuffed Sweet Potato

Who doesn’t love tacos, #AmIRight? But indulging on those greasy little bad boys from your local taqueria isn’t the healthiest of choices. So, we created a remake on a taco that’ll satisfy your Mexican food craving ++ keep you on track with your #FitGoals!

INGREDIENTS

1 Sweet Potato

1 cup Black Beans

⅓ cup Cherry Tomatoes

⅓ cup Bell Pepper

¼ Avocado

1 tbsp Feta Cheese

½ tbsp Cilantro

* Salsa//Hot Sauce [optional]

DIRECTIONS

1] Grab a fork + poke a couple of holes into your sweet potato. Microwave the sweet potato for 3-4 minutes, or until soft. ++Wash + chop any produce. IMG_1176

  2] Slice the cooked sweet potato down the center + stuff with the toppings! ++ Eat up! : )
