Mediterranean Stuffed Sweet Potato

Ever wonder what #TeamCHAARG eats for lunch? This Mediterranean stuffed sweet potato is one of our weekly favs — it’s delicious + super easy to assemble at the office! Bonus: who doesn’t love an Instagram friendly lunch? ; )

INGREDIENTS

1 small Sweet Potato

1 cup Arugula

1/2 cup Grape Tomatoes

2 tbsp Hummus [we recommend lemon garlic flavored hummus!]

1 tbsp Parsley

1 tbsp Feta Cheese

1/2 tbsp Hemp Seeds

3-5 Kalamata Olives

DIRECTIONS

1] Using a fork, poke holes in the sweet potato to allow it to vent as it cooks. Microwave the sweet potato for 3-4 minutes [depending on size], or until it is soft. Slice the potato down the center + lay on top of a bed of arugula. [optional: try drizzling on some olive oil ++ sprinkling salt + pepper on the arugula if you want to change things up!]

2] Layer on those toppings! No worries if the toppings begin to overflow out of your sweet potato, additional veggies are a great thing!
