Mango + Coconut Chia Pudding
Arguably one of the most delicious breakfasts out there ; ), chia pudding also happens to be a great recipe for meal prep! This recipe is easy to change up to suit your taste [try a different fruit combo, or add nut butter] — all you need to remember is the ratio: 3 tablespoons of chia seeds for every 1 cup of liquid.
INGREDIENTS
- 3 tbsp Chia Seeds
- 1 cup Coconut Milk
- 1 tsp Vanilla Extract
- 2 tsp Agave//Honey
- 2 tbsp Coconut Flakes
- 1 Mango [chopped]
DIRECTIONS
#1] Combine Chia seeds, coconut milk, vanilla extract + agave in a bowl. Whisk to combine all ingredients ++ set in the fridge for at least 4 hours [or overnight!]
#2] Spoon the chia pudding into a glass, top with chopped mango + coconut flakes ++ eat up!
