Lemon Garlic Summer Pasta
We always get requests for *healthier* pasta recipes, so we wanted to give you a lighter summer pasta recipe! With this combination of lemon juice, garlic, + a little bit of parm, you won’t even miss your go-to pasta sauce! We highly recommend trying chickpea or brown rice pasta for a healthier option : )
*Makes two servings
INGREDIENTS
- 1 cup Sliced Mushrooms
- 1 can Peas
- 1.5 cups Lacinato Kale [chopped]
- 2 cups Pasta [we recommend Banza Chickpea Pasta for added protein!]
- 1 Lemon
- 3 Garlic Cloves
- Optional: 2 tbsp Parmesan Cheese
- Staples: Olive oil, salt, pepper
DIRECTIONS
#1] Cook pasta according to directions
#2] Chop kale into bite sized pieces, add to a bowl with a pinch of salt, + massage with your hands until the kale is darker green in color + fragrant
#3] While pasta is cooking, saute your veggies! First, heat 1 tbsp olive oil in a pan. Once oil is hot, add sliced mushrooms + saute for 4 minutes
#4] After 4 minutes, add kale/chopped garlic to the pan + saute for 1 more minute
#5] Turn off the stovetop, add peas, + mix everything together well
#6] Add pasta, juice from ½ lemon, parmesan cheese, + salt + pepper to taste to the pan
#7] Mix well, let cool, + ENJOY!
