Lemon Garlic Hummus

Anyone else *obsessed* with hummus — or is that just me? This lemon-garlic hummus is super bright in flavor which is a great contrast to the inches of snow currently blanketing my backyard — I still can’t believe the temperatures have been in the negatives this week! This recipe is super quick +  easy + tastes great with a bunch of different veggies! You can even put it on top of *zoodles* for a different take on pasta! Food should be fun right?!

INGREDIENTS

1 can of Chickpeas
2 small Lemons
2.5 tbsp Extra Virgin Olive Oil
4 tsp Tahini
2 Garlic Cloves, diced
½ tsp Salt

DIRECTIONS

1] Rinse + drain chickpeas + put in a food processor or a blender along with the garlic cloves and salt. Cut the lemons in half and squeeze in the juice. Blend until a rough mixture forms.
2] Add in the tahini + slowly pour in the olive oil as you blend until smooth.
3] Dip your veg + enjoy!
