Kale + Shroom Panini

There is nothing more classic than a sandwich for lunch… + this quick + easy sandwich is perfect for a chilly fall day! Bonus, it’s packed with nutrients + it’s completely plant-based!

INGREDIENTS

  • Bread [2 pieces] — we love Ezekiel Bread!
  • 1/4 cup Onion [chopped]
  • 1/2 cup Portobello Mushrooms [sliced]
  • 1/4 cup Kale [chopped]
  • 1/2 Avocado or 2 tbsp Hummus
  • 1 tsp Olive Oil
  • Salt + Pepper to taste

DIRECTIONS

#1] Heat 1 tsp olive oil in a pan, once heated, add onions + cook for 1 minute before adding the mushrooms
#2] Cook for about 6 minutes while stirring often
#3] Once onions + mushrooms are cooked, add kale + salt/pepper + cook for an additional minute
#4] Toast bread + add mashed avocado or hummus to one piece
#5] Add kale, mushrooms, + onion to your sandwich + enjoy!
