Grilled Salmon With Avocado-Lime Salsa

Salmon is a health food superstar + pairing it with avocado makes for an unstoppable health duo. If you haven’t added this superfood to your diet yet, start with this recipe! The avocado-lime salsa creates a tangy + savory kick. You are going to love this delicious + light meal — now go get your summertime grillin’ on!

INGREDIENTS

*makes 2 servings

For the salmon:

  • 2 — 3oz Salmon Fillets
  • 1 tsp Chili Powder
  • 1 tsp Sea Salt
  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1/2 tbsp  Cilantro [chopped]
  • 2 tbsp Olive Oil

For the salsa:

  • 1 Avocado [diced]
  • 1 Lime
  • 1/2 small Red Onion [diced]
  • 1 tbsp Cilantro [chopped]

DIRECTIONS

#1] Rub salmon with the olive oil. Combine the spices + rub them onto your salmon fillets. Place in the refrigerator while preparing the salsa.

#2] After your avocado + red onion have been diced, + your cilantro has been chopped — combine them in a bowl. Cut your lime into quarters to make juicing easier + squeeze all the juice over other salsa ingredients. Stir all ingredients until they are mixed evenly + place in the refrigerator.

#3] Take out your salmon fillets + grill [or bake if a grill is not available]. For easy grilling, I placed my salmon on tin foil over the flames, closed the grill lid, + let cook w/out flipping. Salmon cooks fairly quickly, so watch it + depending on how thick the fillets are, leave it on for about 8 – 10 min. Cooking fish can be a little nerve-wracking for first timers, so if you’re not sure if your salmon is done, cut into the thickest part of your piece + look inside. If the inside is a darker pink than the outside, let it cook a few more min.

#4] Once salmon is cooked, let cool for a few minutes, top with avocado-lime salsa, + eat up!
