Green Power Salad With Avocado Dressing
We’re obsessed with any + all *power bowl* recipes, especially those including avocado! ; ) This power salad packs in the greens with a punch of protein ++ thanks to the avocado dressing, this is far from one of those *bland* salads. Pack the dressing on the side + you’ve got a healthy ++ filling lunch that’s easy to take on the go!
* for the dressing [makes 3-4 servings]
2 tbsp Lemon Juice
1 small Garlic Clove
2 tbsp Tahini
¼ cup Water
Salt + Pepper to taste
* for the salad [makes 3-4 servings]
3 cups Arugula
2 cups Broccoli
1 can Cannellini Beans
½ cup Feta Cheese [*optional
1] Combine all dressing ingredients in a blender or food processor + blend until smooth. Taste the dressing + add salt + pepper as needed. Store any extra dressing in an airtight container in the fridge. ++ wash your produce, chop the broccoli, rinse + drain the beans.
2] Layer the arugula, broccoli + beans into a bowl, drizzle on the dressing + sprinkle the feta cheese on top. Any leftovers can be stored in an airtight container in the fridge.
