Green Goddess Buddha Bowl
We love buddha bowls [aka, throw a ton of veggies + goodness in a bowl] for so many reasons! You can pretty much throw whatever you have on hand in them + create a well-balanced, delicious meal packed with TONS of nutrients. Try this Green Goddess Buddha Bowl — it includes root vegetables, cauliflower, + brussels, all topped with a homemade Green Goddess Dressing.
INGREDIENTS
- 6-8 Brussel Sprouts
- 1/2 Medium Sweet Potato
- 5 Small Fingerling Potatoes
- 3 Rainbow Carrots
- 1 cup Cauliflower
- 1 cup Arugula or 1/2 cup Quinoa [or a little bit of both!]
- 1 tbsp Olive Oil
For The Dressing:
- 1/2 cup Greek Yogurt [plain]
- 2 Garlic Cloves [pressed + diced]
- 1 tbsp Lemon Juice
- 1/2 cup Cilantro
- 1/2 cup Parsley
- 1/2 tsp Salt
- 1/2 tsp Pepper
- As Needed: 1 tsp Water [if dressing is too thick to blend well]
DIRECTIONS
#1] Preheat oven to 375 degrees + line a baking sheet with foil or cooking spray
#2] Cook quinoa according to package if you’re including quinoa as your base!
#3] Chop sweet potato, fingerling potatoes, brussel sprouts, carrots, + cauliflower into bite size pieces + add to a medium sized bowl to coat in olive oil, salt, + pepper
#4] Put veggies on baking sheet + roast for 35-40 minutes
#5] Make Green Goddess Dressing! Add all ingredients to a blender/food processor + blend until smooth, adding small amounts of water as needed to assist with blending
#6] When veggies are done roasting, let cool for 10 minutes + assemble your bowl, using arugula or quinoa [or both!] as your base. Garnish with avocado if desired. Enjoy!
