Red, White + Blue Fruit Salsa + Cinnamon Crisps
HAPPY INDEPENDENCE DAY CHAARGies! We are so lucky to live in a country as great as ours — don’t forget the reason for this weekend. Now get out there + celebrate with your best friends//family! More than likely you have a party//BBQ to attend with TONS of not-so-healthy treats. While we are all about a balanced lifestyle + encourage you to #TreatYourself [especially during a holiday!], this weekend is a perfect opportunity to make a healthy + YUMMAY sweet treat ++ spread the CHAARG lifestyle to your friends + family.
This Red, White + Blue recipe is amazing — it’s festive, refreshing, light + SWEET! Not to mention, it’s so quick that you’ll have it made [+ devoured ;)] all before you are done singing the Star-Spangled Banner… [dare you to try ; )]. Looking for more R, W + B recipes? We’ve got you covered.
1.5 cups Strawberries [diced]
1 cup Blueberries
1.5 cups Apples [diced — Gala or Honeycrisp work best!]
About ¼ cup fresh mint Mint [finely chopped]
½ Lemon [juiced]
For the tortilla chips
1 tbsp Cinnamon
2.5 tbsp Brown Sugar
2 tbsp Honey [melted]
3-4 6” Wheat Tortillas
#1] Preheat oven to 350F. Using a cooking brush, brush a decent amount of honey over the tortillas [only one side of each]. Sprinkle with cinnamon + brown sugar mix.
#2] Using a pizza cutter slice the tortillas into 8 slices + place on a non-greased baking sheet. Bake for 10-12 minutes or until tortillas are crisp ++ ends start to fold up!
#3] In a large bowl combine strawberries + blueberries + apples + mint. Before pouring all the ingredients together, squeeze the juice from ½ a lemon over the diced apples — this will help them from turning brown!
#4] Using a spatula, mix well!
6] When the *chips* are golden brown ++ crisp — allow to cool for about 5 minutes. ++ EAT UP!
