Fruit Salsa + Cinnamon Crisps

This recipe is festive, refreshing, light + so easy to make. It’s a hit for any dinner party!

INGREDIENTS

  • 1.5 cups Strawberries [diced]
  • 1 cup Blueberries
  • 1.5 cups Apples [diced — Gala or Honeycrisp work best!]
  • About ¼ cup fresh Mint [finely chopped]
  • ½ Lemon [juiced]

For the tortilla chips 

  • 1 tbsp Cinnamon
  • 2.5 tbsp Brown Sugar
  • 2 tbsp Honey [melted]
  • 3-4 6″ Wheat Tortillas

DIRECTIONS

#1] Preheat oven to 350F. Using a cooking brush, brush a decent amount of honey over the tortillas [only one side of each]. Sprinkle with cinnamon + brown sugar mix.
#2] Using a pizza cutter slice the tortillas into 8 slices + place on a non-greased baking sheet. Bake for 10-12 minutes or until tortillas are crisp ++ ends start to fold up!
#3] In a large bowl combine strawberries + blueberries + apples + mint. Before pouring all the ingredients together, squeeze the juice from ½ a lemon over the diced apples — this will help them from turning brown!
#4] Using a spatula, mix well!
#5] When the *chips* are golden brown ++ crisp — allow to cool for about 5 minutes.  ++ EAT UP!
