Cranberry + Apple Quinoa Salad

 

Cool morning runs, hot apple cider + warm pumpkin pie — what’s not to love about fall! It seems that by mid October, maple syrup + cinnamon start to run through our veins. We all love finding or creating our own tasty fall treats, but sometimes that *fall spirit* falls short with our bigger meals. It’s sometimes tough to break free from our usual [+ sometimes boring] healthy meals! Although salad is a go-to, why not mix it up with a new + creative seasonal salad?! Knowing that quinoa is a close friend to us all ; ), let’s talk about this cranberry + apple quinoa salad.

INGREDIENTS

½ cup Quinoa

1 Granny Smith Apple [sliced]

½ cup dried Cranberries

cup Red Wine Vinaigrette

cup sliced Almonds

¼ cup  Onions [diced]

cup crumbled Blue Cheese

2 cups Spring Mix

½ tsp Black Pepper

½ Lemon [juiced]

DIRECTIONS

#1] In a medium sauce pan, bring water + quinoa to a boil, then reduce heat + cover for about 15 minutes. Stir occasionally. While the quinoa is cooking, grab a small bowl, pour dressing onto lettuce + mix gently.

#2] In a medium bowl, add cooked quinoa, almonds, cranberries, onion + lettuce. Squeeze lemon + stir in with black pepper.

#3] Place the salad in a bowl or plate + layer on the sliced apples + blue cheese on top!
