Coconut Chia Energy Bites

We’re crazy for chia ++ if you haven’t noticed yet, we kind of have an obsession with *bites.* These, particularly, are ENERGY bites [exactly what you’ll need for finals week!]. This recipe is super easy + if you buy pre-chopped dried fruit — all you have to do is measure + stir! Perfect if you’re short on time, but want a snack that will hold you over until your next meal!

INGREDIENTS

  • 1 cup Rolled Oats
  • cup [+ ½ cup to roll the bites in] Coconut Flakes
  • ½ cup Almond Butter
  • ½ cup Chia Seeds
  • ¾ cup dried, chopped Mango
  • ½  cup Honey
  • 1 tsp Vanilla Extract

DIRECTIONS

#1] Combine all ingredients into a large mixing bowl + stir until your arms are feelin’ the burn ; ). The mixture is pretty sticky so I recommend popping it in the freezer for 20 minutes before trying to roll into balls!
#2] Once the mix is cold — scoop out a spoonful into your palm + form into a ball.
#3] Roll each of the bites in the excess coconut flakes to coat.
#4] Eat up! The leftovers can be stored in an airtight container in the fridge or taken as a great on-the-go study snack!
